As a young man he went to America where he studied economics at UCLA University. Then, he studied at the Culinary Institute of America.
In 1993 he has made his first professional steps next to Thomas Keller where he was specialized on both the French and Japanese cuisine.
In 1996 he began working in large hotels like the Sheraton Hotel, where he was the executive chef. He continued his chef career in quite a few well known American restaurants
In 1999 he returned to Greece and specifically in Chania Crete, where he was specialized and worked on the Cretan cuisine and local products. Up to 2005, he was the executive chef, in the NYKTERIDA restaurant.
In 2005 he moved to Athens, where he was the Chef of the restaurant "Alatsi', winning the Gold Cap and gained several Gourmet awards.
He then took part in the Cretan committee reality cooking show in MEGA Channel’s «Master Chef» and the «Junior Master Chef» (2010-2013).
In 2013-2014 he has continued his career in MEGA Channel, presenting the successful show "Without a Prescription". A year later, he presents the show «Joy» which explores the gourmet dishes in Athens.
From 2011 until today he is the executive chef of ERGON restaurants in Greece and abroad.

Ingredients 02

For the pie sheet

  • 500 gr flour
  • 1 glass of water
  • 1 shot of raki (tsikoudia)
  • 1 spoon of lemon juice

For the filling

  • 100 gr of any type of Cretan cheese
    (Cream cheese: anthotiros, graviera, malaka, mizithra)
  • 200 gr spinach
  • 200 gr wild greens
  • 40 gr salt
  • 20 gr pepper
  • 1/2 bunch flower, parsley, fennel


Wash, drain and thick cut grasses and herbs. Then saute with olive oil, chopped onion and drain.
Mix greens with cheese until it becomes a paste. We make the roll sheet, cut it into squares and place a heaped teaspoon of the filling in the center.
We close, carefully pulling the four corners to the center and fry in olive oil at 170 degrees.

Restaurant Organizes “Interactive Coοking Lessons of Traditional Cretan Dishes” for small and large groups in English Language.

Each group will get to choose, prepare and finally eat all dishes prepared after the local wine tasting at the restaurant’s cellar. Participation, food selection and Date reservation shall be done at least a week in advance.
